Try the good players forum.
And when there, give them more info :-
- What team are you
- What year is it
Etc.

The best one I find is always Rene Meutelsen (sp) a dutch coach at Man Utd, otherwise Italian teams tend to have the best coaches. If they have high adaptability stat they can be signed up has assnt managers.

since your user name is inter, I assume that you'd play as inter.
The most mentioned names would be Pako (liverpool ass man) and Moniz (Spur coach). There might be many others depend on the game random. I suggest you to do search since it varies for each game.

man management, squad discipline and motivating are, in fact, more important than adaptability for ass man.
If you are likely to let him manage team for match (going on vacation), then, tactical knowledge is important as well.
Other than that, coaching attributes (for the category that you need), working with youngster, judging A/P, determination will be things that you should look for.

René Meulensteen was the coach I always choose in FM2007, he's excellent. However, it's quite hard to recruit him as an assistant in FM2008. In FM2008 I have had trouble signing up a good assistant mangager. Vincenzo Pincolini is one of the best coaches in the game but he'll only go for the First Team Coach position.

Paolo Baffoni (Forli - I think)
Hans Jorritsma (Free - Holland Coach)

Either of these two will make a good assistant if you are struggling to find one, Baffoni being the better of the two. They'll usually sign for lower league clubs as well.

Man Management
Judging C/A
Determination
Tactical Knowledge
Discipline
Motivating

These are the attributes I would look for.
